Had an interview earlier this year for a company. Perm job and their interview format was a on demand video interview.
You had a few technical questions and you gave the answers on a webcam recording. No one was in the interview. Was strange. Kind of like an actor doing an audition.

That said, the right to be forgotten/deleted only applies if the processor/collector no longer requires the data for the purpose for which it was originally collected, which could be why they cited "training purposes". I don't really have any problem with this tbh. One of my friends is going through the permie recruitment process these last few months.
He has a phone call interview with HR, then a video meeting with a mid level manager. Then either an in face meeting or another video with senior mangers of the business. Then in one case having gone through all of this the owner wanted to meet him too!
Wouldn't it be easier just to record the interviews so that senior people can easily review the candidates and what was said?
Often people say, they will save your CV for future positions. But people being people, by then they have probably forgot who you are and what you said. How much better is it to be able to refer back to the video?
