FPS:
CoD4 (this game rules, nothing touches it, other than possibly CoD3!!)
GoW/GoW2
Fun type things for 2 player = Lego (you already mentioned this tho)
Dont buy Assassins Creed unless you want to be bored after the 3rd time of doing exactly the same thing and knowing you have to do it 4 more times!!
however the graphics are awesome!
Everybodies Golf is v good, but i'm not sure if thats on the 360 yet. Ping Pong (or table tennis whatever its called) is v good on 360.

My fave "2 player games on one screen" have been fighting games like Tekken, VF or Sega Tennis. Are there any good 2 player games where both players are on the full screen at the same time? Excluding footy or first person driving games. Mashed on the original Xbox was brilliant and a good example of what I'm getting at. All the FPS's split the screen which looks rubbish.
