The stick waving is crucial but is only a small part of the overall job a conductor does for sure. Some reality show a couple of years ago had some guy off the street win a conducting competition after a short time being trained.

During a performance the conductor is keeping the orchestra to the correct tempo and communicating dynamics, without those basics it would be all over the place and sound flat.
