How about magic squares?
Not quite the same number etc every time, but every column and diagonal adding up to the same number?

Double it
Add X (where X is even and magnitude can depend on person doing it)
Half it
Take away number you first thought of
answer is X/2
You can even show a slightly older child the algebra to explain it and because they are interested they usually understand it
