Thinking out of the box here, but why don't you go on a bender out in Farringdon? Cracking pubs and bars over that way, especially round Exmouth Market and Clerkenwell Green. When you're done put your cousin on the Thameslink to Gatwick.
True, but they tend to get really quiet after 10ish when everyone buggers off home.

Take the Victoria line to Green Park then you'll find plenty of pubs in the Mayfair/St James/Piccadilly Circus area. If you miss the last tube, you can probably still walk via Green Park & St James Park back to Victoria in about 20 minutes.
There are no good pubs around Victoria. I've worked at a few funds around there. Combination of embassies, very expensive real estate (In Belgravia) and chav / tourist hell around the train and bus stations
I'd give the Kings Head on Albermarle St (Also in Mayfair, close to the Ritz) a go
(As far as missing the flight via the Gatwick Express, the likelihood of falling asleep and ending up in Brighton after a few swift halves is quite high )
Mayfair is full of Americans. In fact, Mrs Obama ate lunch in the Audley the other day. Also check out Shepherd's Market -- there's a pub there called Ye Grapes which is good.
Mmmmmmmm. Not quite the description I would use, but it's been about a year since I've been in there. It's not horrid though.
This is not some provincial backwater we are talking about, where everyone is tucked up in bed by 11pm.

Soooooo my strategy is
Purchase ticket to Gatwick in advance
Get cousin completely winkered
Deposit bibbling cousin on the main concourse at Victoria (outside WH Smith would be about right)
Giggle and run away, knowing the poor bugger has fck all chance of getting to Gatwick, never mind the plane?
Good suggestion. He's coming in from the US so not sure how wrecked he'll be and what he'll feel like doing.
Hopefully dear cousin will bring the corporate credit card
