It's simple, if he can't do the job as required. leave.
It's like a diver saying " I can do everything the job requires except go underwater"
He was given three years of special dispensation because he was situated where there were others that could carry the load.
Now that there aren't and he has to do the job he is being paid for, he expects them to either employ another person to handle the pork products, or remove pork products from the menu.
Sorry, but he wanted to cook for people that like their sausage and bacon breakfasts. stuff him
