If I was her I'd be having a look at university courses that have it as an entrance requirement. It seems to me that Economics and Psychology are too specialised (and will therefore limit her options at this stage).
When I was studying Comp Sci the lecturers didn't really like people having Comp Sci A levels (as they had to teach them over again)

We have just this min looked at uni courses and entry requirements, none want economics so that has been dropped.
She has realised that Maths will be of much greater use so she is taking that.

To take a German degree you dont need to have studied German at A level !

She seems quite keen on what she has chosen but we have a parents evening coming up and we can discuss this further

Tends to be the same with Electronics A levels: they think they know it all & actually know very little.
