I also want to go back there. Have been to Brazil, Argentina and Uruguay but never made it to Chile

I liked Argentina & Uruguay.

I also spent quite a bit of time in Chile. If you like seafood get yourself over there now. The country doesn't have a Machu-Pichu or an Amazon to pull in the tourists so there are fewer of them which suits me just fine.
