    I do love a slow-barbecued rack of pork ribs but with something other than overly sweet sticky BBQ sauce.

    Chuck a ham joint in the slow cooker, fill up with cheap apple juice, cook for 7 hours or so.

      Somerset Pork Casserole with cream

      Ingredients:
      • One large onion
      • Two or three cooking apples, such as Bramleys, peeled, cored and diced
      • 600g of diced pork
      • One litre of cider ( or scrumpy if you prefer)
      • Veal stock cubes if desired
      • Seasonings
      • Double Cream (200 ml)

        (mushrooms/Carrots/Leeks etc optional f you want to bulk it out)


      To cook:
      Fry the onion in some butter until softened. Roll the pork in one tablespoon of seasoned flour until coated, and fry in the same pan as onions until browned.

      Put all the ingredients in a lidded casserole. Cook for approximately two hours on a low temperature, such as 150 degrees, until the pork is very tender.

      When cooked, pour away any excess liquid and stir in the cream.

      Serve with rice, or potatoes and some green vegetables, or just some fresh crusty bread.

      Works well a slow cooker too. and / or with vegetables; there is no reason why you couldn't add a few diced carrots or mushrooms etc.

          Two all beef patties, special sauce, lettuce, cheese, pickles and onion.
          All in a sesame seed bun
          (Although it's better without the pickles)
