      I worked in a bread factory (it sure as fck wasn't a bakery) in the early 90's. I haven't touched the commercial bread since my first day there.

      Watching the 'master-mixer' picking his feet in the canteen before ignoring the wash basins and going hands first into half a ton on dough was possibly the clincher, or maybe the fact that I let 300 loaves fall to the dirty floor, only to see the older hands pick them up and bung them through the slicers and bagging machine like nothing happened.

                  300g brown flour
                  300g granary flour
                  a whole entire packet of cooking butter (250g???)
                  2 tblspns milk powder
                  1 tblspn yeast
                  1 tspn salt
                  1 tblspn sugar
                  500ml water

                    Panasonic Breadmaker bread here for several years.

                    325g strong white flour
                    75g granary flour
                    1 tsp salt
                    1 tsp sugar
                    3/4 tsp yeast
                    1 tbsp olive oil
                    270ml water

                    Sometimes add a tbsp of Poppy, Sesame, Pumpkin, and Sunflower seeds as well

                    Yummy.

                    Hard to slice when fresh though - fixed by getting an electric rotary slicer
