Got a demi john of alcoholic ginger beer on the go atm. First batch came out a bit watery so beefed up the ginger content and grated it instead of chopping this time.

This is the theory, I'm still experimenting atm. Will let you know how it turns out.
1 Piece of ginger, not sure about the exact size, fits nicely in the palm of my hand.
1 Lemon
1.5 tsp dried yeast.
Half a bag of sugar
Warm water.
Leaving out the usual sterilisation of the kit.
In a small bowl or cup mix 1tsp of the sugar with the dried yeast and some warm water. Stir well and leave for 20 mins.
In the mean time peel and grate the ginger into a bowl making sure to catch all the pulp and fibre.
Thinly peel the lemon, leaving at much of the white pith behind as possible. Slice the peel and add to the bowl with the ginger. Squeeze the juice from the lemon and add that as well.
Tip the whole lot into a demi john.
Put the sugar in a large jug and add warm water, pour into the demi john. Add the yeast that should now be frothing happily.
Top up with warm water leaving about an inch below the neck of the demi john.
Seal with a rubber bung and fermentation trap.
Leave to brew.
Bottling depends on what exactly you want.
For a naturally fizzy kids drink bottle after 1 day adding a teaspoon of sugar. Leave for 24 hours then put it in the fridge overnight to kill the yeast and stop the fermentation process and allow it to settle
Bottle after 2 Days - As one day but a little more alchoholic. Good summer drink for grown ups who dont want wine or beer.
3 Days - Aproaching beer strength.
4 Days - Real ginger "Beer" 4-5% alchohol.
Leave it longer and if it keeps fermenting you'll end up with a sparkling Ginger Wine at around 12-15%.
Once you've got what your after put it in the fridge overnight to kill the yeast stop the fermentation process and allow it to settle.

Don't say that! I kept that fact from ex-mrs HAB. She thought it was a soft drink.
I used to make it, but she hated me doing it. I think the believed the stories about exploding. She drank it though.
I love the stuff. It is an excellent drink for where we were.
How did this happen? Who's to blame? Well certainly there are those more responsible than others, and they will be held accountable, but again truth be told, if you're looking for the guilty, you need only look into a mirror.
Just invested in a fruit press - set me back 180 quid but it's squeezed out every last drop of juice from a rather poor grape harvest this year to give me 2 gallons of rosé. Also got a couple of gallons of cider on the go & I'm about to go out the back and load up on sloes; should be enough for a good few litres this year
