When my father-in-law takes my 2 year old to the park with his dog s/he always says "come on, lets go dogging" as they leave.

That is very canny. You have been spared the "Daddy, what's dogging?" conversation whenever s/he overhears the word, because s/he's already got a satisfactory explanation. Let it stay that way, at least until s/he's old enough to get a driving license.
