A friend of mine is a veggie though. She explained that she's not a veggie because she loves animals, but because she hates plants.

Quick Thai Red Chicken Curry

1 med-large onion
2 breast fillets chicken
Thai red Curry Paste
Can Coconut Milk
Dark Soy Sauce
1 Tomato roughly chopped
Mushrooms chopped small handful

Uncle Bens Thai Rice

Fry onions and chicken in some oil and thai red curry paste
add tomatoes and mushrooms
Add cocunut milk, add tblspn of soy sauce
salt and pepper to taste
Add more curry paste if required

Cook rice

Serve
