    Another recipe

    Here's another recipe for youse.

    I got this tip off an Asian bird I worked with in Eastcote, she was one of those who could wobble her head sideways while she was talking to you. Very disconcerting to some Westerners, like me, whose heads stay mostly in the same position as they go through the day.

    Anyways, she was totally puzzled about why we eat such rubbish food, and why we dont make the simplest effort to improve it.

    Lamb chops with mashed potato or rice.


    In The morning, before you go to work, place the chops on a working board.
    You will need a few hot finger chilles and a couple of cloves of garlic.
    And a disposable plastic glove (or some such)

    Rub the chilles into one side of the chops, hard enough to slowly wear the chille down. when they are all rubbed to bits, turn the chops over.
    Now rub the garlic in.
    Place the chops back in the fridge.
    That night, fry or grill the chops as normal
    cook the potato or rice in your usual way.

    Steak Tartare


    Get 500 gms of best steak from the butcher. The fresher the better and if it’s still throbbing; that’s perfect.
    Chop the meat with a cleaver into paper-thin pieces, add egg yoke, mustard, Worcestershire sauce and hot sauce in a large bowl until smooth. Gradually whisk in the olive and lemon juice until it becomes the constancy of a loose mayonnaise. Season with salt and pepper .

    No cooking required.

        With all due respect, it's a bit of a chore. Why not make a hot sauce, then cut the steak into thin strips and eat raw, sashimi style?

        What works with fresh tuna works with top quality beef steaks.

            Fresh tuna steak, sliced.
            mix wasabi with some soy until blended in a bowl, chop some spring onion, stick in the tuna and marinade for 30 mins.

              Excellent Ms Norrahe. I shall drink a '98 Deidesheimer Riesling Spätlese with that. Not cheap, but life is short, and one must enjoy life before going bankrupt. There'll be plenty of time for drinking meths under a bridge and reminiscing about the good times; may as well enjoy life while I have some of my warchest left.

                Chinese chicken patties

                This is a very easy and healthy recipe; it can be eaten as a snack, served with stir fried veg as a main course or served as nibbles prior to a dinner party with Thai red chilli dipping sauce.
                Ingredients

                6 chicken thighs, boned and skinned
                1 inch fresh ginger
                1 red chilli
                2 cloves garlic
                2 sprigs spring onion
                1 tablespoon dark soy sauce
                150g fresh coriander

                Roughly chop the ginger, chilli, garlic, spring onion and coriander, place in a food processor and pulse till finely shredded. Roughly dice the thighs and them add to the mix in the processor, add the soy sauce whilst it is pulsing.
                You can now shape the mixture into balls or patties, take a heaped dessert spoon and shape using your hands.
                The mixture can now be either steamed or baked. If steaming, do so over a medium heat for 10 minutes, if baking 150 degrees again for 10 – 12 minutes.

                The recipe can be varied quite easily, use 2-3 salmon or cod fillets instead of the chicken. Chinese can become Thai, use green or red curry paste rather than the chilli, ginger and coriander.

                  Something for bonfire night

                  Spiced Squash Soup

                  1 butternut squash
                  2 stalks lemongrass
                  10 dried lime leaves
                  2" fresh ginger
                  1 clove garlic
                  2 shallots
                  500ml chicken stock
                  2 tomatoes sliced
                  Fish sauce 50ml
                  Juice of 1 lime
                  1 tsp palm sugar
                  1 red chilli
                  1 tin coconut milk

                  To garnish: roughly chopped fresh coriander

                  Half and de seed the squash, drizzle with olive oil and roast in a low oven (150c) for 45 mins.
                  Peel the ginger and slice, remove the outer stalks from the lemon grass and chop roughly, slice the shallots and crush the garlic.
                  Add the chicken stock to a pan, along with the ginger, lime leaves, shallots, lemongrass and garlic; bring to the boil and then turn down and simmer for 30 mins.
                  Once the stock is infused strain and return to the pan, when the squash is roasted, separate the flesh from the skin and add to the stock along with the sliced tomatoes, finely sliced chilli (deseeded if you require less heat) and palm sugar.
                  Simmer for 20 minutes, then blend to a smooth consistency, add the coconut milk, then add the lime juice and fish sauce to taste.

                    Wholemeal rice and Tuna


                    Boil some wholemeal rice for 15 minutes, until done, then tip onto plate.

                    Open two tins of tuna, drain sunflower oil, and tip tuna on top of rice.

                    Open tin of peeled tomatoes, heat in microwave for 30 seconds and place next to rice.

                    Sprinkle Worcester sauce over meal.
