According to a dictionary, all journalists publish and, since Nigel Farage publishes, Nigel Farage is a journalist. That is basically your argument. It isn't that the dictionary definition of a journalist is incomplete (there isn't a complete definition), it's that you thought you could settle this with a dictionary.

Does a dictionary drive usage or reflect usage? Try comparing a recent edition with an edition several decades ago. Is a dictionary a simple tool or an infinitely complicated analysis of all possible interpretations and applications of a word at the present instant in history? Obviously, it's a simple tool and it responds to usage. I just find the idea that a dictionary could settle this question to be quite amusing and revealing, that's all.
