Basically the question is wrong. As one of the friends was a scouser, the correct puzzle should be,
Three friends go to a restaurant, they have a tenner each.
One of them takes the thirty pounds to the till and finds the bill is £25
he puts 2 quid on the table as a tip, and gives himself and the others a pound
so they each paid 9 quid = £27. plus a 2 pound tip = £29
Who stole the charity box?
I understand why you are upset. It was bad news over the weekend, learning that you will have to power up your electricals before flying to the USA. If your vibrating butt plug doesn't get through security, you would be devastated

where did the other pound go ?
They each paid 9 quid, but that included the 2 pound tip, because the 2 pounds came out of the 3 * 9 quid that they paid.
So adding on the 2 pound tip implies that they made a second 2 pound tip over the top of the one what they had already made. Which would make for a happy waiter, but £2 less to put into the pub fruit machine that they go to next, a little sozzled.
