OK, how about something like:

“This is question is often asked and is becoming a tired cliché. Not every aspect of my skill set is perfect; there is inevitably some distribution in the level of each of my skills. As and when I find a skill lacking I make every effort to correct the matter. Identifying where I am lacking in skill level depends on those challenges I face.”

When I had this I told the truth - within reason .

"My biggest weakness is I hate doing fiddly admin tasks. I'm much more of a hands on technical person so it is frustrating to spend time form filling. It's not something I'll ever enjoy but at the same time I realise it's often necessary so I just get on with it and do it."

Which is true. Well ok my biggest weakness is laziness but don't think that would go down well.
