Need ideas for working holiday during Summer school hols

If you had a fully remote contract with flexible hours and wanted to take kids somewhere to Europe for the Summer school holidays period where would you go and where would you stay ?

Hotels might be expensive for long term, also some block VPN access. Holiday parks, like Siblu don't normally have a quality internet available.
I am thinking of checking villas on owners direct website, but there are so many options ..

Need a stable internet connection and some entertainment for kids (beach would do, but they will probably get bored after a week or two, so need more options). I could work, lets say, 11-3pm and then 6pm-10pm and spend the rest of my time with my family.
