You don't really want either - ideally, you want to combine it with a hot stone top, so you can cook on there as well. Failing that, metal. Tefal do some good ones, or if you are in France, then get one there much cheaper than you can get in the UK.

Tefal do one that comes with only two pans, which should be perfect for you. I don't think they do a single pan one, though.
