I was wondering, I'm not a coffee expert, but I make my own frothy milk on my coffee machine at home, so was perplexed how I would get it 'drier' or 'stiffer' - it's just milk, frothed up. I thought the difference between a latte and a cappuchino was the ratio of foam/warm milk/coffee (and the sprinkling of cocoa)

Cappacino frothed milk should be drier and stiffer than that used for a Latte
This, along with the quantity of milk used is what gives the latte a different taste and feel to the cappuccino.
