    Wet hickory chips are the way to go - salmon in newspaper sounds great. I had chicken marinated in lemon zest, soy sauce and honey. Hoisin ribs as well - good trick to boil the ribs until they're falling off the bone then marinate and bbq.

    Or Bellagio of course if you're feeling flush

    If you're a bit strapped for cash then the Orleans (off strip) is not bad.

    The Hilton is good and right next to the monorail which saves on the walking. There is always a good show on, they had the Moody Blues recently and they were brill.
