Sure. Just make sure you put the expected fee in the letter so there is no misunderstanding. When you are done, send them an invoice. Simples.

WHS - or get them to raise a purchase order for the amount and then invoice against that.

I would write a letter / email, if it were me. Include details of the rate, date that you will be there, and the payment terms. Get them to acknowledge receipt of the letter and acceptance of the details, to make sure there is no scope for any misunderstanding.

Just attend the workshop and send an invoice letter. To be safe keep a copy of the letter / email asking you to attend.

I have been contracting for 12 years and have used contractoruk for a long time but have not previously felt the need to post.

I have been offered a single days consultancy (to attend a workshop) by a company I have had dealings with while providing services for another client and I was wondering what paperwork I need to cover this.

I have looked at the QDOS Client to Contractor standard contract and it seems a bit overkill for attending a single workshop.
