UK Contracting from NZ

Hi,

I am leaving my job in the UK to go to New Zealand on a one year working holiday visa with a view to staying permanently.

My current boss has asked if I am available to do some contract work for him once I am out there.

Can anyone tell me if this is possible and what I need to do to ensure I don't have to pay tax too both UK and NZ governments.
