      2 Racks of baby back ribs. Get the butcher to trim and remove the membrane from the bones.

      Dry Rub - from the weber BBQ app.

      2 Tbsp sea salt
      1 Tbsp Freshly ground black pepper
      1 Tbsp dried thyme
      1 Tbsp chilli powder
      1 Tbsp granulated sugar
      1 Tbsp celery seeds
      1/2 Tbsp mustard seeds
      1/2 Tbsp ground cumin
      1/2 Tbsp ground fennel

      Rub well into the 2 racks and cook at 110 degrees Celsius for about 4 hours or so. if you can do this on the BBQ you'll get a better flavour. Prep a BBQ sauce - preferably something sticky turn up the heat high, baste and grill until the BBQ sauce caramelises.

      Did this at the weekend. Possibly the best ribs I have ever had....

        We had barbecued duck breast yesterday. First score the skin of the duck, then marinade for at least a couple of hours, preferably overnight in Worcestershire sauce, tabasco, paprika powder, chopped garlic, a little lemon zest and olive oil.

        Sear the fat side first, then turn, then cook for about 4 minutes or so on each side.

            You can BBQ seafood as well
            Crab
            Lobster
            Crayfish
            Langoustines
            Razor clams
            Mussels
            Shrimp/prawns (we get the really big ones which are frozen in blocks of ice)
            etc....

            If you can buy live and kill at home just before eating

            For cooking whole fish then you can get cages which hold the fish as it's cooking to make turning easier.
            Coffee's for closers

                I know, haven't got round to purchasing it as a chef friend has pointed me in the direct of somewhere I can get it at a discount.

                Will be getting the large, with stands, table, indirect grill, pizza stone and smoking equip.

                  I'm a Weber man too - love it with hickory chips for a nice refined smoke.

                  Love lobster on the BBQ with melted butter, lemon juice, garlic, white wine and some tobasco.

                  Shame I couldn't get any this weekend....
                  If you think my attitude stinks, you should smell my fingers.

                    We've given up on all that Barbeque nonsense. We just take the George Foreman combo grill\griddle outside and plug it in.
                    ...my quagmire of greed....my cesspit of laziness and unfairness....all I am doing is sticking two fingers up at nurses, doctors and other hard working employed professionals...

                      MMMMMMMMM! Lobster, only way to do it, keep it simple.

                      Another recipe I used to do was stuffed baby squid with feta and chorizo.
