            I think they've done away with that requirement now. My son was baptised a couple of years ago in Dublin. His father (i.e. me) isn't catholic, his godfather (my brother ) isn't either. Nobody questioned it.

            Come to think of it, that's the last time the three of us have been in a church.....

                at the last Catholic baptism I attended I'm sure the godparents weren't Catholic. No questions asked. And thanks to some wonderful turns of Reformation theology, it's even absolutely fine to say the bit about "I believe in...the holy Catholic church" without believing in the (Roman) Catholic church.
