Wife used to work at a local Vegetable facility, picking the crop and packaging up to send out to the shops.
When they ran out of organic they just put normally stuff in.
They've actually caught people at farmers markets doing that - the trick is to put more dirt on the "organic veg" and mix in some that aren't class 1 and 2.
