I did it again last year after our fruit picking. The results are as follows :
Strawberry wine - nice enough, like a rose, needs to be chilled. Very strong, and has a kind of warming sensation as it slips down so possibly more of a desert wine or candidate for turning into strawberrry brandy.
Blackberry wine - nice to drink, nothing to rave about though.
Blackcurrant wine - Smooth, classy, could easily have been shop bought. Friends rave about it and I have back orders.
Elderberry wine - Best not talk about that one.
So I have learned a few lessons about different fruits and their characteristics, the importance of pectinase (an enzyme to remove pectin) and acidity. Also learned a bit about tannins.
Make no mistake, wine making is an art and the blackcurrant wine could have been luck. We will find out!

Someone at clientCo's birthday so am reluctantly going for a beer tonight. then back to sunny Chelmsford for the beer festival.
Tomorrow playing golf then ad a barbeque for the rest of the day.Then Sunday will be mostly spent nursing a substantial hangover.Comment

Tomorrow: Mate's 40th so he's having a BBQ, I'm driving though cos it's 2hrs away.
