I had a little look at Erwin last time and couldn't see this functionality...does it have it?

If you really want to kill yourself and do this in Visio, you can do what you want by using different layers to hide stuff etc.

You may be able to pick up some more free stuff at http://www.visiocafe.com/ that could save a bit of time.

You could also try this add in from Microsoft that seems to do a lot of what you want dynamically:
