Calm down calm down. It's clear that minestrone knows a whole lot about the typical work of a butcher working to produce produce (!) for supermarket value ranges, but making something a bit more unusual is the work of a specialist and thus 5 years' service doesn't really mean much - even wikipedia doesn't agree with him
