I like black pudding, I also like haggis and white pudding. I do draw the line at tripe though.

THere is a middle man between butcher shop and farmer and that is an abattoir manger. Meat has to be stamped there and if you get caught with an unbranded animal in the shop you are out of business. You do get blood from an abattoir anymore.Originally posted by norrahe View PostThe chef is a close mate and btw my family were butchers and farmers, so I know quite a lot about butchery
As for my "mate" he has to use dried blood for commercial use but for personal use we have made it using fresh.
Oh and btw I'm a trained chef myself.
If your mate is using blood on the side for personal customers he is breaking every law going post BSE. He is illegaly slaughtering animals, I very much doubt he is though and rather you do not know what you are talking about.Comment

Cannot go near white pudding, it's just mush, tripe is rank as well. Haggis is top quality, the manufacture of it though is pretty stinking.Originally posted by Incognito View PostI like black pudding, I also like haggis and white pudding. I do draw the line at tripe though.

Hell of a drive just for a chippy, but worth it."I hope Celtic realise that, if their team is good enough, they will win. If they're not good enough, they'll not win - and they can't look at anybody else, whether it is referees or any other influence." - Walter Smith
