This is now resolved. The 3TB volume created by the Intel Matrix app in XP was not recognised by the OS.

So I went back to the BIOS and created a 2TB volume (the maximum allowed). Then I selected Create New Volume again and it offered the remaining space.

The confusion was that on the initial "Create New Volume" it said that 2TB was 100% of the space available with no indication that there was any additional capacity left to allocate to further volumes.

Anyway I've now got my 3TB spread over two logical drives.
