Sardine toasted sandwich for lunch - the ones in tomato sauce

At the behest of the cardiac rehab people, I've started making my toasted sandwiches with olive oil instead of butter. It works really well. I use a pastry brush to paint it on the surfaces of the bread that face out, and the toasties come out a lovely golden colour, with a really nice flavour

I loathe mayonnaise, so their assertion that it's "in my fridge" is very wide of the mark - if some did somehow get in there, it would be removed rapidly and with extreme prejudice through the medium of the council's refuse collection service
